Love this slaw as a burger topping. It’s not too spicy and goes really well with whatever flavor you are cooking up. After combining all the ingredients, no need to add more mayo. The juices from your carrots will come out so try to hold off and wait a few minutes.
Carrot Curry Slaw
Ingredients (2 servings):
1 cup shaved carrot strips, lightly packed
2 - 3 tbs vegan mayo
½ tsp curry powder
¼ tsp cumin powder
salt & pepper to taste
Directions:
Shave off strips of carrot with a potato peeler, or a cheese grater.
Combine and mix with the carrot strips 3 tbsp vegan mayo, ⅓ tsp curry powder, ¼ cumin powder, salt and pepper to taste.
Set aside for 5 min to marinate. Refrigerate if not used immediately.
